Oh, this is good - I'm in such a rut. I'll tell you what's cooking around here, and then send you an email with details if you want 'em! Sweet potatoes, kale and tofu over udon noodles with (sorta spicy) peanut sauce. Butternut squash enchiladas (and bean/chicken/cheese ones for the 2 small people who aren't certain they like the squash ones). Chicken tortellini soup, black bean soup (thank you!), and frittata with whatever veggies/cheese are in the fridge - prob'ly spinach, bell peppers, mushrooms and feta!
